Oven Roasted New and Sweet Potatoes
- 5 lb of new potatoes and sweet potatoes
- 1 Tbsp apple cider vinegar
- 1/4 cup of bacon or animal fat dripping (may also substitute olive oil)
- sea salt
- thyme or rosemary seasoning
Preheat oven to 500 degrees and position racks in the upper and lower section.
Add the potatoes to a large pot and cover with water. Add the vinegar and 3 Tbsp of salt. Bring to a boil and simmer for about 7 minutes or until tender.
Drain the water and slice the potatoes into large cubes, then put in a large bowl.
While they are still hot, season them with salt, pepper, herbs and the animal fat. Stir them to ensure even coating on all the potatoes.
Spread them out on 2 greased baking sheets.
Place one baking sheet on top rack, other on bottom and roast for 20 min stirring 1/2 way. Then switch the racks and roast for another 20 min stirring halfway.
